1. In a saucepan add the double cream, sugar, vanilla seeds and remaining pod, black pepper & salt and bring to a simmer until the sugar has dissolved.
2. Soak the gelatin leaves for 5 minutes in cold water, then remove from the water and stir into the spiced cream mixture.
3. Leave to cool for 30 minutes, remove the empty vanilla pod then pour into ramekins. Put in the fridge to set for 6 hours.
4. Top with sliced strawberries and enjoy!
