Pre-heat your oven to 200°C / 180°C fan / gas 5. Line a large baking tray with greaseproof paper.

Put the oats, seeds, nuts, spices, olive oil, maple syrup and sea salt into a large mixing bowl. Stir until everything has been well coated.

Spread the mixture out onto the baking tray (you want everything to be in a flat layer so it can evenly toast).

Bake for 25 minutes, stirring regularly to stop the nuts burning.

Allow to cool and then add the chopped apricots and raisins.

Once cool, place into an airtight container and enjoy for a good few weeks.
